How It Works

Temperature Scales
  • Celsius (°C) — Used in most countries. Water freezes at 0°C and boils at 100°C.
  • Fahrenheit (°F) — Used primarily in the US. Water freezes at 32°F and boils at 212°F.
  • Gas Mark — A numbered scale used on gas ovens, mainly in the UK and some Commonwealth countries. Each step is roughly 14°C (25°F).

Fan vs Conventional Ovens

Fan (convection) ovens circulate hot air with an internal fan, distributing heat more evenly. Because of this, fan ovens cook more efficiently and recipes typically call for a temperature 20°C (35°F) lower than a conventional oven. If a recipe says 200°C conventional, set a fan oven to 180°C.

Gas Mark Scale

Gas marks are based on a scale where Gas Mark 1 = 140°C (275°F). Each subsequent whole number increases by approximately 14°C (25°F). Half marks (¼, ½) cover the lower range used for slow cooking and drying.
